Just when sushi in Warsaw was becoming boring, along comes Gabriel de Garcia with a head full of ideas. Having worked under some of the planet’s top chefs (Juan Maria Arzak, Quiqe Dacosta), de Garcia has sought to bring his experiences together to hone a menu that fuses Spanish tastes with Japanese influences. The denouement is bold, creative, almost visionary in fact.
